Ambrosia
This is our take on the “nectar of the gods.” It is made with only grapes and honey. It is a sweet, complex wine that balances the smooth sweetness of honey and the bold fragrance of chardonnay grapes.

Archer
We coined the name “Archer” for this wine because the recipe, made with spices, was popular among medieval military men. It can be served hot, or slightly chilled, and goes well with cheese and pastries.

Beekeeper
This mead is light and fruity. The sweetness of the honey is balanced by the acidity in kiwi fruit. An excellent pair for fruit desserts.

Castellan
In medieval Europe, Castellan was the keeper of the castle, given special permission to brew mead. This is our recreation of this enticing spiced mead.

Hunter
This recipe has been made with hot peppers, so be cautious. This exciting flavor is paired great with chocolate.

Lumberjack
This mead is made with apples and honey. It is quite complex and balanced. It tastes great with any desert containing apples.

Knight
This noble wine was considered worthy of the aristocratic tables, and the recipe is attributed to the Capuchin monks. If you try some, you may find that monastic life was not as boring as we imagine. It is best paired with fruits, cheesecake, and chocolate.

Monk
The recipe is attributed to Bernardine monks, who were fascinated by mead-making. Tantalize your tastebuds with this delicate wine, made with spices and rose petals. Enjoy it with all desserts, especially brownies and pies.
Brewing Process
We began brewing mead because of a family tradition of home wine and mead making. It is a challenging, but rewarding process, and we have spent about ten years testing and re-creating recipes. A background in chemistry and microbiology helps us better understand the process, but we do not interfere with natural fermentation. We use the finest ingredients: only highest quality spices, and honey from quality sources, including our very own bees. We use only natural ingredients, and no artificial flavoring. All of our products are aged in French oak barrels for at least one year. Any traces of sulfites are produced by yeast in natural fermentation. Our mead is stable, and there is no need for added preservatives. You can open and close the bottle again and again, and safely enjoy our wines quite a time.

The term “honeymoon” comes from Babylonians, who declared mead the official wedding drink.
